Yes, healthy cooking for vegetable haters is possible. You an make anything from broccoli to leafy greens appealing for a vegetable hater and cook it healthy (instead of covering it up with cheese).

President H.W. Bush doesn't eat broccoli. We know that. Everyone knows that! Hard to believe that was newsworthy a decade ago. One thing is for sure, the Prez isn’t alone in his aversion for some vegetables.

Remember what mom used to say when she tried to get you to eat liver, "It all depends on how it is cooked!" Actually mom had a good point. It does depend on how it is cooked!

Take carrots for example. How could you prepare those? Cold/raw; roasted in the oven with juices from meats and seasoning; in stew; stir fried, grilled, mixed in with salad, shredded or mashed. The point is that there are so many ways vegetable haters can enjoy healthy cooking!

Many people eat mashed potatoes. Rarely do you hear of anyone disliking mashed potatoes. Why not cook other vegetables and then mash them for a healthy alternative. Try boiling turnips, sweet potatoes, onions and carrots and then mashing with a little olive oil and seasoning.

Think out of the box a little. If you tried brussel spouts when you were nine years old and hated them, isn't it time you tried them again? Healthy vegetable cooking is limited only by your imagination. There is so much more to vegetables than just pouring some in a bowl with a dollop of butter and then sticking them in the microwave for three minutes.

Perhaps you have some cookbooks under the cupboard. Is there dust on them? Did you even know that there is a section specifically for vegetables? Chances are if you haven't dusted off your cookbooks in decades you may not be likely to do so now.

Consider a modern alternative. Wouldn't it be nice if someone would just email you different recipes?
